Summer is the perfect time to indulge in seafood. Fresh as you can find! Made to enjoy outside! 

Tonight is Coconut Shrimp! Such a perfect way to eat shrimp! And so easy to make!

Super Colossal Shrimp ( as many as you want for a serving- we have 4 each)

Aqua Star Super Colossal Raw Shrimp, 16 oz

Sweetened shredded coconut flakes, panko bread crumbs, flour, egg, deep fryer-heated

  1. mix 2 parts coconut to 1 part panko-
  2. put flour in a bowl
  3. put egg in a separate bowl and scramble
  4. roll shrimp in flour, dip in egg and cover with coconut/panko mixture
  5. carefully place in fryer basket and fry until golden brown.

Serve with a fresh mix green salad, cole slaw and a dipping sauce. I used Fresh Mango chutney! There are many recipes out there! We love this one:

Mango Chutney

3 tbl veg oil

1 large mango peeled and chopped

1 inch gingerroot peeled and grated

2 tbl sugar

1 tbl malt vinegar

1 1/2 tsp chili powder

1 1/2 tsp salt

Cook all ingredients over low heat 15 minutes or until mango is soft. Cool and serve!

Take your plates outside to the patio or deck. Bring a nice wine, light a candle, hold hands for a moment and say “I love you!” A quick kiss and then.. eat!!

Linger after the dishes have been cleared and enjoy the evening as it rolls in, star gaze, live softly, together…
